Create fun creatures from simple and healthy boiled eggs for little children this Easter. They will love helping you make an edible spring scene while also getting one of their five portions of fruit and veg per day.

Ingredients

  • medium eggs6
  • blackcurrant1 tbsp tbsp
  • small carrot1

  • cherry tomatoes80g g
  • sliced cucumber80g g
  • rocket (arugula)30g g
  • rosemaryA few sprigs of

Step-by-step instructions

    Fill a large pot with water and bring it to a boil. Add the eggs and simmer over low heat for 10 minutes. Drain the water, plunge the eggs into ice water to cool, carefully peel off the shells and discard them.

    Cut a few eggs in half and decorate them with blackcurrant for eyes and a small carrot triangle for the beak, creating chicks (see photo). Slice the remaining eggs to form bunny shapes (see photo): quarters for ears, halves lengthwise for bodies. Make a round tail by cutting off the top of one egg.

    Garnish the plate or board with rosemary sprigs and mini carrots, if desired. Serve with sliced cucumber, cherry tomatoes, and arugula.
