Make savory or sweet waffles using this versatile batter mix. For even lighter waffles, beat the egg white to a fluffy consistency and gently fold it into the batter.
Break the egg (for fluffier waffles use only the yolk at this stage) into a large bowl, then add the flour and a generous pinch of salt. Add the sugar if using, then gradually whisk in the milk, followed by the melted butter, until the mixture is smooth. Add the vanilla if using. If you decided to make fluffier waffles, beat the egg white to soft peaks and gently fold it into the batter. Alternatively, you can quickly blend all ingredients in a blender or hand blender. The batter can be prepared 1‑2 hours ahead and chilled.
Preheat the waffle iron according to the manufacturer's instructions and lightly oil it.
Then pour enough batter to just cover the surface.
Cook according to the manufacturer's instructions (usually 5‑6 minutes) until the waffles are golden‑brown and crisp.
Serve immediately or keep warm in a low‑temperature oven while you prepare the rest. If desired, drizzle with maple syrup or sprinkle with powdered sugar.
