Bake these soft, cinnamon‑aromatic balls for the Jewish holiday of Passover, or simply enjoy them with an afternoon cup of tea.

Ingredients

  • egg whites2
  • ground almonds225g g
  • golden caster sugar125g g
  • ground cinnamon1½ tsp
  • vanilla bean paste½ tsp
  • powdered sugar

Step-by-step instructions

    Preheat the oven to 160°C/140°C with convection/gas 3 and line a large baking tray with parchment paper. Beat the egg whites in a medium bowl until stiff peaks form. Add all other ingredients, except the powdered sugar, and a pinch of salt, mixing with a spatula until the mixture becomes homogeneous.

    Shape the mixture into bite‑sized balls, wetting your hands so the mixture doesn’t stick. Place them on the prepared tray, leaving space between each. (They don’t spread much, but leave some distance.)

    Bake for 20‑30 minutes, or until the balls are lightly browned. Keep an eye on them and check halfway through baking. Dust with powdered sugar while still warm, then let cool before serving. Store in an airtight container for up to a week.
