Ingredients

  • avocado2

    halved and pitted

  • banana1

    sliced

  • soft dried plum fruits5
  • unsweetened almond milk6 tbsp tbsp

    or coconut milk

  • smooth peanut butter2 tbsp tbsp

    without sugar if possible

  • cocoa powder3 tbsp tbsp

    or high-quality cocoa

  • coconut milk yogurt100g g

    e.g., CoYo

  • maple syrup or honey2 tsp tsp
  • dark chocolate

    80% cocoa if possible, for garnish

Step-by-step instructions

    Scoop the avocado flesh into a food processor. Add the sliced banana, soft dried plum fruits, unsweetened almond milk or coconut milk, smooth peanut butter, and cocoa powder. Blend until smooth, adding a little more milk if the blade sticks. Scrape the sides once or twice and blend again.

    Divide the mixture among 4 small glass cups. Mix the coconut milk yogurt with maple syrup or honey and spoon a generous amount onto each pudding. Finely grate a little dark chocolate on top and chill for at least 1 hour.
