Chocolate pancakes

Start the morning with these luxurious chocolate pancakes. Top with whipped cream and berries if you like – they also work great as a dessert.

Ingredients

  • self-raising flour225g g
  • cocoa powder50g g

    sifted

  • baking powder1 tsp tsp
  • granulated sugar1 tbsp tbsp
  • large eggs2
  • whole milk400ml ml
  • dark chocolate chips100g g
  • vegetable oil1 tbsp tbsp
  • unsalted butter50g g

    cut into cubes

  • double cream300ml ml
  • icing sugar2 tbsp tbsp
  • vanilla paste1 tsp tsp
  • mixed berries

    (optional)

  • maple syrup

    (optional)

Step-by-step instructions

    Sift the flour, cocoa powder, baking powder and sugar into a large bowl with a small pinch of salt. Add the eggs and whisk with a whisk until smooth. Gradually pour in the milk while whisking continuously until you obtain a smooth batter, then add the chocolate chips.

    Heat a little oil and a little butter in a non‑stick pan until it sizzles. Cook the pancakes using 2 tbsp of batter for each, for about 2 minutes until bubbles appear on the surface. Flip and cook for another 2 minutes (you’ll need to cook in batches). Keep the pancakes warm in a low‑temperature oven while you cook the rest.

    For serving, whisk the cream with icing sugar and vanilla paste until thick. Serve the pancakes topped with the whipped cream, berries and maple syrup if using.
