Make chocolate muffins as a weekend project with kids. They’re perfect with a cup of tea, and you can also add chocolate chips if you like.
Preheat the oven to 180°C/160°C with convection/gas 4. Line a muffin tin with six paper cases. Sift the flour, cocoa powder and baking powder into a medium bowl. In a jug, whisk together the large egg, fine sugar, vegetable oil and whole milk, then gradually add to the dry ingredients (add chocolate chips now for extra chocolate flavor if desired) and mix until smooth.
Divide the batter evenly among the cases and bake for 20‑25 minutes, until a skewer inserted in the centre comes out clean. Remove from the oven and let cool.
Meanwhile, gradually mix ½‑1 tbsp water with the powdered sugar until you obtain a thin but not overly runny consistency. Drizzle the glaze over the muffins after they have cooled.
