Preheat the grill. To make the salsa, place the tomatoes (cut side up), onion rings, jalapeños and garlic on a foil‑lined tray. Season with salt and grill for 8 minutes, or until everything is charred. Transfer everything except the garlic to a blender or food processor together with the chipotle, 230 ml water, 1 tsp salt, lime juice and coriander. Peel the garlic and add it to the blender or processor, blend until smooth. Pour the mixture into a pan.
Turn the oven on to 200 °C (gas mark 6) and spread the corn chips on a tray. Bake for 5 minutes to warm them.
While the chips bake, heat the vegetable oil in a pan over high heat until very hot. Carefully crack the eggs and fry them “sun‑up” (over‑easy) until the whites set. Season, remove from heat and set aside.
Warm the pan with the salsa over low heat and add the corn chips. Gently stir until they are fully coated. Keep warm over low heat.
To serve, divide the chilaquiles among four plates. On each plate place an egg, a little feta or queso fresco, coriander, avocado and red onion.
