Baby Food Recipe: Chicken Meatballs

If your child loves to eat independently, try these tasty chicken meatballs made with fresh vegetables and chicken thighs. Serve with rice and broccoli for a filling dinner.

Ingredients

4 serv.
  • celery stalk½

    chopped into small pieces

  • small carrot1

    chopped into small pieces

  • boneless skinless chicken500g g

    thighs, cut into pieces

  • shallotsa few

    sliced

  • butter

    for greasing

  • cooked rice
  • steamed broccoli

Step-by-step instructions

    Preheat the oven to 200 °C/180 °C with convection/gas 6. Pulse the celery, carrot, chicken and shallots in a food processor until finely chopped. You may need to scrape the sides of the bowl with a spatula a few times.

    Form small meatballs. If freezing, spread them on a tray and place in the freezer. After freezing, transfer to a freezer bag and take out as needed. Before cooking, fully thaw them in the refrigerator.

    For cooking, place them on a tray lined with greased foil and bake for 10 minutes or until browned and cooked through.

    Serve with boiled rice and steamed broccoli.
