Use summer cherries to make this simple crumble with an oat topping. Perfect with a scoop of vanilla ice cream, it's a wonderful summer dessert.

Ingredients

  • fresh cherries1kg kg

    pitted

  • golden sugar50g g
  • lemon1

    juice

  • vanilla extract½ tsp tsp
  • plain flour150g g
  • cold butter100g g
  • salt½ tsp tsp
  • soft brown sugar70g g
  • oats100g g
  • almond flakes40g g
  • ice cream

    for serving

Step-by-step instructions

    Place the cherries in a medium heat‑proof dish (about 28 cm) and mix them with the sugar, lemon and vanilla. Set aside.

    Preheat the oven to 200 °C/180 °C with convection/gas 4. Add the flour and butter to a bowl and rub together with your fingers to form a fine crumbly mixture. Add salt, brown sugar, oats and most of the almonds, and mix. Pour the mixture over the cherries in the dish, then sprinkle the remaining almonds on top.

    Bake the crumble in the centre of the oven for 30‑35 minutes, until the top becomes golden‑brown. Serve warm with vanilla ice cream.
