Samousek, also known as sambousek, are crispy fried filo triangles filled with cheese or meat, popular during Ramadan. They can be prepared in advance, frozen and fried right before iftar for an easy snack.

Ingredients

24 serv.
  • feta200g g

    crumbs or stretchy Kashkaval cheese, grated

  • nigella seeds2 tbsp tbsp
  • plain flour1 tbsp tbsp

    plus extra for dusting

  • sambousek or filo pastry sheets300-400g g

    cut into strips 8-10 cm wide

  • vegetable oil500ml ml

    for frying

Step-by-step instructions

    Combine the cheese and nigella seeds in a bowl until smooth. Transfer the flour to another bowl and gradually whisk in 250 ml of water, then set aside.

    Lightly dust a clean work surface with flour and lay out one strip of dough. Add 1 tsp of the cheese mixture near the top corner, then start folding into a triangle until you reach the bottom end of the strip.

    Brush the end of the dough strip with the flour‑water mixture and seal the triangle. Transfer to a parchment‑lined baking tray and repeat with the remaining strips and mixture.

    Pour the oil into a large pot, filling it no more than half full. Heat until the oil reaches 180 °C on a thermometer or a bread cube browns in 30 seconds, then fry the parcels in batches of 6‑8 for 1‑2 minutes per side until golden. Transfer to a rack lined with paper towels and serve warm.
