Cheese and Rosemary Biscuits

These savory biscuits are extremely cheesy and very easy to make. They make a great gift. If you wish, you can omit the rosemary.

Ingredients

  • wholemeal flour80g g
  • plain flour80g g
  • cold butter100g g

    cut into pieces

  • cheddar100g g

    finely grated

  • small sprig of rosemary1

    leaves finely chopped

  • large egg yolk1

Step-by-step instructions

    Preheat the oven to 180°C/160°C fan/gas 4. Place the flours in a bowl and rub in the butter until the mixture resembles crumbs. Add the cheese and rosemary, then beat in the yolk and mix with a fork. When the mass begins to form clumps, use your hands to knead a smooth dough.

    Take pieces of dough the size of a walnut, form balls and place them on one or two parchment‑lined trays. Slightly flatten with a fork, then bake for 12‑14 minutes. Or roll out the dough between sheets of parchment paper, cut shapes and bake similarly. Let cool on the tray for a few minutes, then transfer to a rack to cool completely. Store in an airtight container for up to a week.
