Perfect for a cold autumn evening, this combination of sausage and Yorkshire pudding in a beautiful twisted shape will definitely delight the whole family.

Ingredients

Step-by-step instructions

    Mix the flour, eggs and milk in a bowl with 1/2 tsp salt, then set aside for at least 30 minutes. Preheat the oven to 220°C/200°C with convection/gas 7.

    Unbind the links between each sausage, keeping them connected. Compress the meat, filling the gaps to form one long sausage. Loosely twist it into a spiral and place it in a large skillet or ovenproof dish (ours was 25 cm wide). Drizzle with oil and brown in the oven for 12–15 minutes.

    Remove the dish from the oven and carefully take out the sausage. Pour the batter into the dish, then place the sausage back on top, sprinkle herbs and return to the oven for 25–30 minutes, keeping the door closed – otherwise the Yorkshire pudding will collapse.

    Meanwhile, heat oil in a pan and cook the onion for 10 minutes or until it begins to caramelize. Add the flour and mustard powder, crumble the bouillon cube. Gradually pour in 500 ml of water, stirring constantly until you obtain a smooth sauce, then add honey, mustard and season. Simmer for 5 minutes, then serve together with the toad‑in‑the‑hole, mashed potatoes and vegetables, if desired.
