Carrots with Bacon and Marmalade Butter

Elevate humble carrots to a new level with unrivaled bacon and marmalade butter. It makes a wonderful side dish for a Christmas dinner.

Ingredients

6 serv.
  • bacon3 rashers smoked streaky
  • butter50g g

    softened

  • marmalade1½ tbsp fine-shred tbsp

    finely shredded

  • carrots800g g

    cut in half lengthwise and sliced at an angle

Step-by-step instructions

    Preheat the grill to high heat and grill the bacon for 3–4 minutes on each side until crispy. Remove from the grill and let it cool.

    Finely chop the bacon and mix it well with the butter and marmalade. The mixture can be stored in the refrigerator for up to three days.

    Place the carrots in a pot and cover with boiling water. Cook for 5–6 minutes until tender but still slightly crisp, then drain and transfer to a bowl. Add pieces of butter on top, stirring until the butter melts.
