Build-Your-Own Salmon Sushi Burrito

Use leftover teriyaki salmon and rice to make these handy burritos. You can season them to taste, or add pickled ginger, wasabi and crispy onion.

Ingredients

2 serv.
  • cooked white rice200g g
  • green onions2

    finely sliced

  • soy sauce2 tsp tsp
  • mayonnaise1 tbsp tbsp
  • mustard1 tsp tsp

    to taste (optional)

  • prepared salmon fillet100-140g g

    honey-baked salmon or hot-smoked salmon, broken up

  • nori sheets2
  • avocado½

    peeled, pitted, sliced

  • cucumber¼

    julienned

Step-by-step instructions

    Transfer the rice to a bowl and mix with green onions, soy sauce, mayonnaise and mustard, if using. Add the salmon, leaving it broken up or mash it with the rice as you prefer. Divide the mixture between two reusable containers. In each lunchbox place a sheet of nori and half the avocado and cucumber.

    To eat, place the rice on a nori sheet, top with avocado and cucumber, then roll loosely.
