Use the extra Brussels sprouts from your winter vegetable box to make this salad. It pairs especially well with cold appetizers on Gift Day.

Ingredients

  • Brussels sprouts200g g

    trimmed and shredded

  • small red onion1

    sliced

  • carrot1

    cut into thin strips or coarsely grated

  • red cabbage¼

    core removed and shredded

  • celery seeds1 tsp tsp
  • small bunch of scallions

    parsley or dill, roughly chopped or torn

  • yogurt50g g
  • mayonnaise50g g
  • mustard1 tsp tsp

    to taste

  • apple cider vinegar2 tsp tsp

    or any other vinegar

Step-by-step instructions

    Place the Brussels sprouts, onion, carrot, cabbage, celery seeds and everything except the small bunch of herbs into a bowl and mix well.

    Put the yogurt, mayonnaise, mustard, vinegar and seasonings into a small bowl and mix well. Pour the sauce over the vegetables, then stir thoroughly so everything is coated. Taste and adjust seasoning if needed. Transfer the salad to a serving bowl or platter and sprinkle the remaining herbs for garnish.
