Growing broad beans in your garden? Use your home harvest in this version of broad bean hummus served with homemade crackers.

Boil the beans in a large pot of boiling salted water for 2–3 minutes until tender. Drain well and rinse under cold running water to stop cooking. Remove the white skins from the beans, then transfer them to a food processor together with garlic, tahini, lemon juice and olive oil. Season to taste, then blend on medium speed, adding a few drops of water until the mixture becomes creamy and smooth. Transfer to a bowl or serving plate and set aside.
Preheat the oven to 200 °C/180 °C with convection/gas 6. For the crackers, combine flour, sugar and 1 tsp salt in a large bowl, making a well in the centre. Mix olive oil with 225 ml water, then slowly pour this mixture into the well, constantly stirring with a wooden spoon. Knead a rough dough, then shape the dough into a ball by hand. Place it on a lightly floured surface, knead for 5 minutes until smooth, then cut it in half. Roll one half on a large sheet of parchment paper into a thin rectangle 45 × 50 cm – the thinner, the crispier the crackers. Repeat with the second half on a second parchment sheet.
Transfer the dough rectangles together with the parchment onto a baking sheet. (Optionally cut the dough into triangles and arrange them on parchment‑lined trays.) Lightly brush the dough with water, then sprinkle with za'atar, sesame seeds and a little sea salt. Bake for 12–15 minutes until lightly golden with a few bubbles at the edges. Let cool, break the rectangles into coarse crackers. Store in an airtight container for up to a week. Drizzle the hummus with extra oil, sprinkle with remaining sesame seeds and serve with the crackers for dipping.
