A classic Christmas dinner sauce. Made with freshly grated nutmeg and a generous amount of rich cream, this is the perfect sauce for your roasted meat.
Peel the onion and remove the root. Make 12 holes in the onion using a cocktail pick and insert the garlic cloves into these holes.
Place the onion in a medium saucepan together with the bay leaves, black peppercorns, and milk. Gently heat for 20 minutes until the onion becomes soft, then strain the milk through a sieve into a clean saucepan and discard the bay leaves, onion, and pepper.
Heat the infused milk to a gentle boil, then add the wholegrain flour, fresh breadcrumbs, butter, and freshly grated nutmeg. Cook for another 5 minutes until the sauce thickens, then add the rich cream and season well. It can be prepared up to two days in advance. Before serving, gently reheat on the stove.
