Blackcurrant Gin

Got an excess of blackcurrants? Make homemade blackcurrant gin. Drink it neat, add a splash to champagne, or use it instead of cassis in cocktails.

  • granulated sugar200g g

Step-by-step instructions

    Wash the blackcurrants and remove stems, shoots and leaves from the berries. Discard any that are bruised or darkened.

    Place the prepared blackcurrants into a sterilized 1‑liter jar, add the sugar and gin. Close the lid and shake until most of the sugar dissolves. Set the gin bottle aside for later.

    Store in a cool dark place and shake the jar daily if possible, or every few days. The gin will be ready in three weeks, but can be left up to three months with the berries for a stronger flavor. Do not leave the berries in the gin longer than three months, otherwise the taste will deteriorate.

    Pour a little into a glass and taste. When the flavor satisfies you, strain through a fine sieve or cheesecloth, returning it to the original or another clean bottle. Discard the berries. The flavor will continue to develop over time; store in a cool dark place. Drink neat, add a splash to champagne, or use instead of cassis for a less sweet profile.
