What could be more comforting on a cold winter night than a beef stew with spruce and creamy mash? You can make this stew ahead of time and freeze it for busy weekdays.
Preheat the oven to 170°C (or 150°C with fan)/gas 3. Place a large non‑stick, oven‑proof pot on high heat and add 1 tbsp oil. Season the beef and sear it in batches until nicely browned on both sides, avoiding overcrowding the pan. Remove each batch and set aside on a plate.
Add the remaining oil to the pot and reduce the heat to medium. Add the onions and cook for about 10 minutes until soft and golden‑brown. Stir in the flour and cook, stirring constantly, for 1‑2 minutes.
Pour in the spruce and stir well to scrape up any browned bits from the pot. Return the beef to the pot, add the broth and thyme sprigs. Bring to a boil, cover, transfer to the oven and cook for 1.5 hours.
Add the mushrooms to the pot, stir well and return to the oven for another 1.5 hours.
Season to taste and add half of the chopped parsley. Sprinkle the remaining parsley on top and serve with mashed potatoes, if desired.
