A light, nutritious dinner — a combination of sweet apple, aromatic beans and piquant pesto that boosts your intake to two servings of fruit and veg in one meal — perfect for busy weekdays.

Ingredients

4 serv.
  • sunflower oil1 tbsp
  • onion1

    finely chopped

  • large apple1

    cored and diced

  • canned chopped tomatoes410 g

    with garlic and herbs

  • tomato purée (passata) in a packet300 ml
  • canned borlotti beans290 g

    drained and rinsed

  • red pesto3 tbsp
  • leftover cooked pasta300 g

    or 220 g pack of ready pasta

Step-by-step instructions

    Heat the sunflower oil in a skillet over medium heat, sauté the onion for 3 minutes.

    Add the diced apple, cook 2‑3 minutes until softened.

    Add the canned chopped tomatoes, tomato purée and beans, stir.

    Bring to a boil, then reduce heat and simmer for 10 minutes.

    Stir in the red pesto and the cooked pasta, mixing until the pasta is heated through.

    Serve in deep plates with crusty bread.
