Open a can of beans and in 25 minutes create a fragrant tomato stew with soft halloumi. A quick, easy dinner that lifts the mood on a weekday – perfect for those who value flavor and simplicity.

Heat 2 tbsp olive oil in a large skillet over medium heat. Add the finely sliced onion, red pepper and a pinch of salt, sauté for 10 minutes until the vegetables become soft.
Stir in the minced garlic cloves, red chili pesto and ground coriander, cook for another 1 minute, stirring constantly.
Add the drained and rinsed beans, canned tomatoes and half a can of water, bring to a gentle boil and simmer uncovered for 10 minutes until the sauce thickens slightly.
In another skillet, heat the remaining oil over medium heat. Fry the halloumi slices for 2 minutes on each side until they develop a golden crust.
Taste the stew, add more spices if needed, then spoon it into deep plates. Top with the fried halloumi, sprinkle with finely chopped coriander and serve with garlic bread if desired.
