Using a sharp knife, cut each chicken thigh three times, slicing the meat down to the bone so the marinade can penetrate and the meat cooks evenly. Then place them in a bowl, add lemon juice and 1 tsp salt, mix and let marinate for 1 hour.
In a large bowl whisk together the yogurt, minced garlic, peeled ginger, red chili powder, cumin, garam masala, vegetable oil and lemon juice into a uniform mixture. Add more lemon juice and salt if needed. Pour the prepared thighs with the marinade, cover with a lid or film and refrigerate for at least 3–4 hours, preferably overnight.
Heat the grill to medium‑high temperature (or barbecue to maximum heat) and line the grate with foil. Place the chicken on the grill and cook, turning frequently, for 20–25 minutes until the meat is browned and cooked through. After removing from the grill, brush each thigh with a generous knob of butter, let it melt and serve with lemon wedges.
