The best vegetarian lasagna! Walnuts, zucchini, carrots, onion and mushrooms ground to a meat‑like texture, layered with plenty of cheese and sauce. Cozy and nutritious!
Place the mushrooms, walnuts and zucchini in a food processor. Pulse several times until the mixture is very finely chopped. Transfer to a bowl. Repeat the process with the garlic, onion, and carrots.
Heat the butter or olive oil over medium‑high heat. Add the chopped vegetables together with the spices. Sauté for 7‑10 minutes until they become very soft and fragrant. Add the tomato sauce and salt; stir. Taste and adjust! The amount of seasoning depends on your sauce brand.
Preheat the oven to 400 °F. Mix the mascarpone with the grated garlic and salt.
Start by spreading a layer of sauce on the bottom of a 9×13 inch pan. Then layer in this order: several lasagna sheets, 1 cup of sauce, a few spoonfuls of mascarpone, ½ cup of Parmesan, ½ cup of mozzarella, and repeat (usually about 4 layers). Finish with sheets, sauce, cheese and extra sauce on top for a nice appearance.
Cover with foil and bake for 40‑45 minutes. Remove the foil and broil for 5 minutes to brown the cheese on top. Let rest for 10 minutes, then slice and serve!
