A light Italian vegetarian dish that can be prepared in 40 minutes. Six simple ingredients, fragrant spinach and melted goat cheese – perfect for a party or a cozy family dinner.
Preheat the oven to 220 °C (200 °C with convection, gas 7) and bring a kettle to a boil.
In a large bowl combine the minced garlic cloves, diced tomatoes, add spices, mix and spread the mixture into a baking dish.
Place the spinach in a large colander, pour boiling water over it until the leaves soften. Rinse with cold water and squeeze out as much excess moisture as possible by hand.
Coarsely chop the spinach, season to taste and sprinkle it over the tomatoes.
Slice the polenta, layer it over the spinach, drizzle with olive oil and bake in the oven for 10–15 minutes.
Sprinkle goat cheese on top, return to the oven for another 5 minutes, or until the cheese turns golden and melts.
