This light baked apple pancake is cooked in a cast‑iron skillet and served with homemade apple‑cider syrup.
Bring the apple cider, 1 cup brown sugar, and cinnamon sticks to a boil. Reduce heat and simmer for about 30 minutes, until the volume reduces by about one‑third. Set aside and let cool.
Preheat the oven to 350°F. Mix the apples, brown sugar, and cinnamon. Spread the mixture onto the bottom of a greased 9‑inch pie plate.
Whisk the remaining ingredients with a whisk until lightly combined and pour the batter over the apples. Bake for 15‑18 minutes, or until the top is golden and set. Remove from oven and let cool 5‑10 minutes.
Using a knife, separate the pancake edges from the pan. When the pancake releases, carefully flip it onto a serving plate, dust with powdered sugar, and drizzle with syrup!
