Forget store‑bought frozen pizzas – this simple recipe lets you create your own Margherita with juicy cherry tomatoes. Make it now or freeze it for a quick dinner on hand.
Prepare the dough according to the package instructions, then transfer it to an oiled bowl and let it rise for about 1 hour.
Punch down the dough in the bowl, expelling all air with your fist. Divide the dough into 6 pieces and roll each on a lightly floured surface into a circle about 18 cm in diameter. Cover the unused pieces with a damp kitchen towel or oil‑greased film to prevent drying.
Place the pizza bases on large oiled baking trays (you’ll need 2–3). On each base spread 1 tbsp of tomato sauce or paste, then scatter the basil leaves, cherry tomatoes, mozzarella and parmesan (or other favourite toppings). Optionally freeze the pizzas immediately, leaving them on the tray wrapped in film. If baking right away, preheat the oven to 240 °C (220 °C with convection or gas 9). Bake for 8–12 minutes until the crust is crisp and golden. For baking from frozen, remove the film, preheat the oven to 220 °C (200 °C with convection or gas 7) and bake for 10–14 minutes until you achieve a crisp golden crust.
