Quick, hearty one‑pan dinner – pasta, sautéed bacon, fragrant mushrooms and a creamy pesto sauce ready in 30 minutes.
Cook the pasta in simmering salted water in a large pot, following the package instructions.
While the pasta cooks, slice the mushrooms, and cut the bacon into strips about 2 cm long.
Reserve a few tablespoons of the cooking water in a cup, then drain the pasta and set it aside.
Sauté the bacon and mushrooms in the same pan over high heat until golden, about 5 minutes.
Return the pasta to the pan, add the reserved water and toss quickly, heating for 1 minute.
Remove the pan from the heat, add pesto, crème fraîche and most of the basil leaves, mix thoroughly until homogeneous.
Serve, sprinkling with the remaining fresh basil.
