Small Italian cookies with fragrant hazelnuts and dark chocolate, named “lady’s kisses”, perfectly complement coffee after dinner — their tenderness and crunch make you want more.

Ingredients

  • hazelnut, blanched100g g

    roasted

  • butter100g g
  • granulated sugar100g g
  • flour100g g

    (preferably type “00” flour)

  • dark chocolate100g g

    broken into small pieces

Step-by-step instructions

    Grind the hazelnuts into a very fine crumb, avoiding over‑grinding so they don’t become oily. Add the butter and fine sugar, grind again until a homogeneous creamy mass forms. Transfer the mixture to a bowl, sift in the flour and knead the dough by hand. Chill it in the refrigerator for at least 1 hour, or until firm enough to shape into balls.

    Preheat the oven to 180 °C (160 °C convection, gas 4) and line a large baking sheet with parchment paper. Scoop teaspoon‑sized portions of dough, roll into balls and place them on the prepared sheet, leaving about 2 cm between them. Bake for 15 minutes until golden, then transfer to a rack to cool.

    Melt the chocolate in a bowl in the microwave, stirring every 10 seconds until fully melted. Spread a small spoonful of melted chocolate onto half of the cooled cookies. Let it set for 15 minutes, then top with another cookie to form a “kiss”. Allow the finished cookies to harden completely; if it’s warm, you can refrigerate them. Serve with coffee.
