Artichoke leaves – the perfect “spoon” for dipping. Prepare a light, fragrant butter sauce and enjoy every tiny leaf – a true gastronomic delight.
In a large pot bring salted water to a boil together with the lemon halves. Trim the stems of the artichokes. Submerge them in the water and cook for 40–45 minutes.
Cut the butter into cubes. Pour the wine into a skillet, reduce it until the volume halves, then lower the heat and gradually whisk in the cold butter, adding it piece by piece. Stir in the grated Parmesan and lemon juice, whisking to a smooth mixture.
Tear off the leaves, dip the broken tip into the sauce, eat it and discard the rest. When you reach the center, lift the inner leaves, remove the fuzzy “choke” and enjoy the artichoke heart.
