Arepas Recipe

Arepas – fried cornmeal cakes filled with any toppings you can imagine, like carnitas, spicy chicken, sweet potato, black beans, sauces, and more. THIS IS REALLY TASTY!

Ingredients

8 serv.
  • pre-cooked cornmeal2 cups
  • salt2 teaspoon
  • warm water2.5 cup
  • oil for frying in a pan
  • carnitas (personal favorite!) or chicken, shredded with chipotle
  • magical green sauce or another sauce (hmm, what else could it be?)
  • black beans
  • sweet potato, sliced thin and fried in olive oil with salt until tender
  • red onion (marinated? tasty)
  • Cotija cheese

Step-by-step instructions

  1. 1

Combine the ingredients: Mix the pre-cooked cornmeal and salt. Add the water and whisk, removing lumps, then stir until smooth. Let the mixture rest for 5‑10 minutes.

  2. 2

Shape the arepas: Divide the dough by hand into 8 portions. Shape each portion into a ball and gently flatten, creating a disc about 1 inch (≈2.5 cm) thick (see photo).

  3. 3

Fry the arepas: Heat a thin layer of oil (about 1/4 inch deep) in a large heavy skillet over medium heat. Add the arepas and fry for about 6 minutes on each side. The arepas should develop a dry toasted crust, not overly browned. Transfer to paper towels to drain excess oil and cool.

  4. 4

Assemble: Cut the arepas in half and fill with your desired fillings!
