Juicy apples sweetened with apricot jam and orange juice, topped with a golden caramelised oat crumble – a perfect autumn dessert.
Preheat the oven to 190 °C (fan) or 170 °C (conventional). Peel the apples, remove the core and slice them thinly. Mix them with the apricot jam and orange juice. Spread the mixture evenly into a butter‑greased 1.5‑liter baking dish, without filling it too deep.
In a large bowl combine the oat flakes, flour and ground cinnamon. Add the cold butter, cut into cubes, and gently rub it into the dry mixture. Add the light muscovado sugar and rub again. Drizzle with the golden syrup and stir with a knife until small clumps form. Sprinkle the apples with the resulting crumble, level it and bake for 30–35 minutes, until the juices boil and the crumble turns golden. Let the dessert cool for 10 minutes, then serve with custard cream, whipped cream or ice cream.
