Delicate, fluffy dumplings floating in a fragrant caramel made from caramelized apples – a perfect dessert for chilly autumn evenings.

Preheat the oven to 180 °C (160 °C with convection) or gas setting 4. In a saucepan melt the butter, sugar and golden syrup, add 100 ml water and bring to a gentle boil. Add the sliced apples, cook 10–15 min until they soften and the sauce becomes liquid. Add a pinch of salt, taste and adjust if needed. If the saucepan is not oven‑safe, transfer the mixture to a baking dish about 20 × 30 cm or into two smaller dishes.
Sift the flour into a bowl, add the baking powder, sugar, ground cinnamon and a pinch of salt, and mix. Rub the cold butter into the dry mixture with your fingertips until you obtain a moist, sandy texture. Add the milk, stir with a fork until clumps form, then knead the dough by hand, gathering the crumbs. Do not over‑mix, otherwise the dumplings will be heavy. Divide the dough into 12 golf‑ball‑size pieces and shape them into dumplings. Place them over the apples, leaving small gaps. Sprinkle a little extra sugar (brown or fine) and bake for 25 min until the dumplings rise and turn golden. Let cool slightly and serve with a generous amount of cold cream.
