Juicy tropical fruits combined with a fluffy American pancake – the perfect breakfast that lifts the mood and fuels you with cinnamon, maple syrup and creamy yogurt.
Coarsely cut the pineapple into cubes and slice the banana into thin rounds.
In a large bowl sift the flour together with the baking powder, add ground cinnamon and sugar, and mix thoroughly.
Make a well in the center of the dry ingredients, crack in the egg and, gradually pouring in the milk, whisk until you obtain a smooth, lump‑free batter.
Add the prepared pineapple and banana, gently fold them into the batter.
Heat a little sunflower oil over medium heat in a non‑stick skillet. Spoon the batter by the tablespoon, leaving space between the pancakes. When bubbles appear on the surface and the edges turn golden, carefully flip the pancakes and cook for another 1–2 minutes until golden brown.
Cook all the pancakes, keeping them warm. Serve 2–3 pancakes, drizzled with maple syrup and topped with a tablespoon of Greek yogurt.
