Serve these crunchy florentines in a festive gift box — the aroma of ginger, fresh orange and toasted almond combined with chocolate glaze creates true Christmas luxury.
Preheat the oven to 180 °C (160 °C for convection) or gas mark 4. Grease the bottom and sides of a 12‑cup muffin tin with oil.
In a small saucepan over low heat, melt the butter, sugar, and golden syrup, stirring frequently. Remove from heat, add the flour, then the ginger, almond slices, and orange zest, and quickly stir until smooth.
Spoon a level tablespoon of the mixture into each cup of the tin. If any mixture remains, bake it in batches. Bake for 10 minutes until the edges turn golden. Let cool for 2 minutes until the florentines are firm enough to transfer to a rack and cool completely. Repeat with the remaining batter.
Melt the dark and white chocolate in two separate bowls over a saucepan of simmering water (the bowls should not touch the water) or in the microwave in 30‑second intervals, stirring after each heating.
Dip half of the cooled florentines into the dark chocolate, then drizzle with white chocolate. Let set on a rack. Store in an airtight container for up to a week.
