In a bowl combine the flour, ½ tsp salt and ajwain (ajwain). Gradually add 160 ml of water, mixing until a soft dough forms (you may need all the water or a little more). Knead the dough for a few minutes, cover it and let it rest for 15 minutes.
Divide the dough into 20 pieces, shape each into a ball, then roll them out into circles about 10 cm in diameter.
Heat sunflower oil in a deep pan (or fryer) to 180 °C; the oil depth should be 5 cm. When a small piece of dough dropped into the oil sizzles immediately, the oil is ready. Fry the puris one at a time, 1 minute per side, until golden. Serve hot, for example with a potato‑tomato mash (see below).
