Use the air fryer to get incredibly light, golden scones in just 15 minutes. Serve them with tea, fragrant jam and thick cream – turning your afternoon tea into a true celebration.
Preheat the air fryer to 180 °C. In a large bowl combine the flour with the leavening agent, add a pinch of salt and quickly rub in the cold butter with your fingers until the mixture resembles coarse crumbs (you can also pulse in a food processor).
Add the fine sugar and mix gently. In a separate bowl combine the vanilla extract with buttermilk (or milk). Gradually pour the liquid mixture into the flour mixture, stirring until a soft, slightly sticky dough forms.
Dust the work surface with flour, turn out the dough and shape it into a ball. Flatten it slightly to a disc about 4‑5 cm thick. Using a 5 cm round cutter, cut out scones. If excess dough remains, form another ball and cut out more pieces.
Place the cut scones in the air fryer basket, lightly brush them with milk. Bake for 14‑18 min until golden and risen.
Store the finished scones in an airtight container for up to three days. Before serving, warm them in the microwave for 30 seconds to soften. Serve with your favorite jam and thick cream.
