Juicy, spicy Buffalo wings with an ultra-crunchy coating thanks to a blend of baking powder and cornstarch – perfectly cooked in an air-fryer.

Pat dry the chicken wings with a paper towel. In a large bowl combine the baking powder, cornstarch, granulated garlic, smoked paprika, cayenne pepper and ½ tsp salt. Toss the wings in oil, then add the dry mixture and mix thoroughly so the coating evenly covers each wing.
Arrange the wings in a single layer in the air‑fryer basket (cook in batches if necessary). Fry at 200 °C for 25–30 minutes, turning them halfway through, until they are golden‑crisp and fully cooked.
Meanwhile, melt the butter in a small saucepan, add the hot sauce and honey, stirring constantly. Prepare the “ranch” sauce: in a bowl combine mayonnaise, sour cream (or yogurt), granulated garlic, lemon juice, green onion and season with salt and pepper to taste. When the wings are done, toss them in the Buffalo sauce and serve immediately, with the ranch sauce on the side.
