Give this classic recipe new flavor notes – toast pecans and chocolate chips, or use your favorite nuts. Cook in an air fryer – quickly, without hassle, and you’ll get an aromatic, moist loaf that melts in the mouth.
Grease the loaf pan with 1 L of oil and line it with parchment baking paper — it’s important that it fits inside the air fryer basket. If it doesn’t fit, use a muffin tin or another suitable container for your machine.
Preheat the air fryer to 160 °C. In a large bowl combine the oil, fine sugar, self‑raising flour and eggs. Mash the bananas with a fork and add them to the batter. Add half of the chopped pecans and all the chocolate chips, mix until smooth. Pour the mixture into the prepared pan and sprinkle the remaining pecans on top.
Bake for 45 min–1 hour, until a skewer inserted in the centre comes out dry. After 20 minutes check if the loaf is browning too much; if so, lower the temperature to 140 °C or cover it with foil to prevent burning. After baking, let it cool on a rack before serving. Store in an airtight container for up to three days.
