Super Bowl Cookies

Everyone loves these at Super Bowl parties. A couple years ago I brought them to the Orlando Brewing Company's party and two enormous platters were completely finished. You can buy the colored M&M's at http://shop.mms.com or at M&M's World in Orlando, Las Vegas or New York. I make two batches, one for each team's colors. These could be considered "good" treats for people avoiding bad carbs since they have oatmeal instead of white flour, but "healthy" may be a stretch!

Ingredients

  • cup brown sugar1
  • cup sugar1
  • cup butter, softened in microwave1⁄2
  • eggs3
  • teaspoon vanilla1
  • teaspoon light corn syrup1
  • cups peanut butter1 1⁄2
  • teaspoons baking soda2
  • cups oatmeal4
  • cup chocolate chips1⁄2
  • ounces M&M's plain chocolate candy, in team colors6

Step-by-step instructions

    Mix all ingredients in a food processor or mixer, except for chocolate chips and M&M's which could get crushed; stir in the chocolate chips by hand.

    Drop by tablespoons on an ungreased cookie sheet (I use a scoop which makes it so easy); then press 4-6 M&M's on the top of each cookie.

    Bake at 350 degrees for 12-15 minutes or until just starting to turn brown; cool for 5-10 minutes before removing from cookie sheet to avoid breakage.
