Create a classic sherry cocktail that dates back to the mid 1800s. Refreshing, long and fruity, we've used a blend of sherries for depth of flavour

Ingredients

1 serv.
  • orange1

    wedge

  • lemon1

    wedge

  • fresh ripe pineapple1 piece of
  • oloroso sherry35ml ml
  • sherry15ml ml

    (we used Pedro Ximénez)

  • sugar syrup1 tsp tsp

    or maraschino liqueur (optional)

  • ice
  • orange

    or lemon wheel, pineapple triangle

Step-by-step instructions

    Put the fruit in the bottom of a cocktail shaker and bruise it with a muddler or the end of a bar spoon to release some of the juice. Add the sherry and sugar syrup if using.

    Fill the shaker with ice and shake hard. This will extract more juices from the fruit and dilute the drink.

  3. 3

    Strain into a highball glass, filled with fresh ice and garnish with a slice of orange or lemon and a piece of pineapple.
