Pokey Balls and Potatoes

My mother made this as I was growing up, and it never had a name. A friend of mine her mom called them Hedgehogs. My little guy named them Pokey balls. My whole family likes them, and are a staple around here. I hope you enjoy.

Ingredients

6 serv.
  • hamburger2 1⁄2 lbs
  • uncooked long-grain white rice3⁄4 cup
  • egg, beaten1
  • condensed tomato soup1

    26 ounce

  • water1

    26 ounce, the empty soup can

Step-by-step instructions

    In a large bowl mix hamburger, rice and egg.

    Get your hands in and mix well.

  3. 3

    Form mixture into meatball shape.

  4. 4

    Pour soup into a large saucepan.

  5. 5

    Add water.

  6. 6

    Heat to simmer over medium heat.

  7. 7

    Lower temp to low.

  8. 8

    Drop meatballs into soup.

  9. 9

    Simmer for about 30 minute.

  10. 10

    Serve with Mashed Potatoes if you like.
