This is a popular drink from Uganda using pineapples, their major crop. It is made using cream or coconut milk and reminds me of the Caribbean. Recipe was adapted from The African Cookbook by Bea Sandler.

Ingredients

2 serv.
  • fresh pineapple2 cup

    very ripe and cut in small pieces

  • brown sugar4 tablespoon
  • cream or coconut milk1⁄2 cup
  • white rum6 ounce
  • vanilla extract1 teaspoon
  • crushed ice1 cup
  • mint sprig

    garnish

  • maraschino cherry

    garnish

Step-by-step instructions

    Blend until smooth and thick.

    Serve with mint and a maraschino cherry in whiskey-sour glasses.
