Pawpaw's Sunday Garlic Pork Roast

Traditional Sunday recipe my grandfather has made ever since I can remember! Best when prepared Sat. night, so it can cook all night, and be ready for lunch after church!

Ingredients

10 serv.
  • pork roast (any)3 -5 lbs
  • olive oil
  • condensed golden mushroom soup2 cans

    (10 3/4 ounce)

  • large onion1

    diced

  • bell pepper1⁄2

    diced

  • water
  • garlic clove1
  • Lipton Onion Soup Mix2 packages

    (1 1/4 ounce)

  • mushrooms, fresh (we like portabello)1 package
  • garlic powder
  • Tony Chachere's Seasoning

    (optional)

Step-by-step instructions

    Cut deep slits into roast on both sides.

  2. 2

    Peel cloves of garlic, crush with spoon.

  3. 3

    Stuff garlic cloves into each slit (don't be afraid of garlic!).

  4. 4

    Season roast, heavily (will loose some during searing).

  5. 5

    Heat oil in large browning pot.

  6. 6

    Sear roast on all sides to golden brown.

  7. 7

    Remove roast from browning pot, place in large crock pot.

  8. 8

    Add 4 cups of water to browning pot.

  9. 9

    Bring to a boil.

  10. 10

    Add all ingredients to roast in crock pot (including water).

    Stir until well blended.

    Bring all ingredients to boil in crock pot (high).

  13. 13

    Cook for 1 hour.

  14. 14

    Reduce to low, cook all night (10-12 hrs).

  15. 15

    Serve over rice or mashed potatoes.
