Leftover turkey wraps with cranberry sauce

Make this quick lunch using all the flavours of Christmas, including surplus cranberry sauce, red cabbage and turkey. It's ideal for Boxing Day

Ingredients

4 serv.
  • cranberry sauce4 tbsp tbsp
  • tortilla wraps4
  • Little Gem lettuce1

    roughly sliced

  • cooked turkey meat200g g

    shredded or sliced

  • leftover roast vegetables120g g

    chopped

  • leftover cooked stuffing150g g

    sausages or pigs in blankets, crumbled or sliced

  • braised red cabbage4 tbsp tbsp

    or pickled cabbage

  • mayonnaise4 tbsp tbsp
  • wholegrain or Dijon mustard1 tsp tsp

Step-by-step instructions

    Spread the cranberry sauce over the wraps, leaving a 2cm border around the edge. Arrange the lettuce, turkey, roast veg, stuffing and cabbage down the middle of the wraps.

    Mix the mayonnaise with the mustard, and drizzle this over. Fold the top and bottom of the wrap over the filling, then roll up from one side like a burrito to enclose the filling. Slice diagonally across the middle to serve.
