Store a batch of unbaked dough balls in the freezer, ready to bake in an air fryer for unexpected guests during Christmas. They are perfect for a festive cookie jar.

Ingredients

24 serv.
  • eggs2
  • granulated sugar175g g
  • unsalted butter75g g

    melted

  • self‑raising flour150g g
  • cocoa powder50g g
  • milk chocolate chips65g g
  • powdered sugar50g g

Step-by-step instructions

  1. 1

Beat the eggs and sugar with an electric mixer until thick and fluffy. Add the melted butter and mix. Sift the flour and cocoa powder, add the chocolate chips and stir to a homogeneous dough. Cover and chill for 1 hour. The dough can be stored in the refrigerator in an airtight container for up to a week.

  2. 2

Preheat the air fryer to 170 °C and place a square of parchment paper in the basket. Shape the mixture into balls using level teaspoons. If baking immediately, roll the balls in powdered sugar for full coating. Arrange them on the parchment, leaving enough space for expansion. Uncoated balls can be frozen for up to two months.

  3. 3

Fry in the air fryer in batches for 8‑10 min (or 10‑12 min for frozen ones), then let cool and firm up for a few minutes before carefully transferring to a rack to cool completely. The cookies can be stored in a jar for five days.
