Ingredients

25 serv.
  • plain wheat flour220g g
  • granulated sugar25g g
  • eggs3

    beaten

  • whole milk530ml ml
  • rich cream175ml ml
  • melted unsalted butter80g g

    plus extra for frying

Step-by-step instructions

  1. 1

Sift the flour into a large bowl, add the sugar and a pinch of salt, then stir. Make a well in the centre, pour in the egg and start whisking from the centre. Slowly pour in the milk and cream, whisking constantly until you have a smooth batter. If you have time, let it rest for at least 1 hour for a better result. Add the melted butter and mix.

  2. 2

Heat a 16 cm skillet over medium heat, then grease it with butter using a folded kitchen paper or brush. Pour a small amount of batter onto the pan, immediately swirling it so it spreads evenly into a neat circle. Cook for 1‑2 min, or until the batter sets and turns lightly golden, then flip and cook the other side for another 1 min. Transfer to a plate and repeat until all batter is used.
