Step-by-step instructions

  1. 1

Preheat the oven to 180°C/160°C convection/gas 4. Line a large baking tray with parchment paper. Pour the butter and sugar into a bowl and beat with electric mixers or a stand mixer for 3‑5 minutes until very soft and creamy. Add the vanilla and beat for 20 seconds until well combined. Add the flour and stir with a spatula. When almost everything is mixed, bring the dough together with your hands.

  2. 2

Divide the dough into 18‑20 balls weighing about 15 g each and shape the balls. Place the balls on the prepared trays, leaving enough space between them. Using a fork dampened with water, gently press to flatten the balls and leave a fork imprint. Bake for 12‑15 minutes until pale‑golden around the edges. Allow to cool completely on the trays.

  3. 3

To coat the biscuits with chocolate, melt the chocolate in a heat‑proof bowl set over a saucepan of gently simmering water. Line a tray with parchment paper. When the biscuits have cooled, dip half of each biscuit into the chocolate, then carefully transfer them to a rack to set.
