Only a few desserts capture summer like Eton mess. Crunchy meringue, whipped cream and strawberry sauce – a winning combination, best served outdoors.
Preheat the oven to 120 °C/100 °C with convection/gas 1 and line a large tray with parchment paper. In a clean bowl whisk the egg whites with an electric whisk or mixer until stiff peaks form, then gradually add the sugar in three parts, each time whisking to stiff peaks. Spoon portions of the mixture onto the parchment, bake on the lower rack for 1 hr – 1 hr 15 min, until the meringue is fully set and lifts easily from the paper. Let cool.
Blend 1/3 of the strawberries to make a strawberry sauce. In a large bowl whisk the cream with the icing sugar until the mixture just holds its shape. Roughly crush ¾ of the meringue and fold into the chopped strawberries, mix, then fold in the strawberry sauce. Spoon into bowls, then crush the remaining meringue and sprinkle on top.
