Enjoy toasted egg and cress club sandwiches during a summer family picnic. Skewer each sandwich and serve with chips.
Pour water into a saucepan, bring to a boil and carefully lower the eggs. Cook for 6 minutes, then cool under running water until they can be peeled. Peel the eggs, then let them cool completely.
Mash or chop the eggs, then mix them with 1½ tbsp mayonnaise and a little seasoning, if desired. Toast the bread.
Place one slice of bread on a board. Spread butter on it, then spread three‑quarters of the egg mixture and sprinkle with cress. Add the other slice of toasted bread and gently spread the remaining mayonnaise. Add tomato or lettuce leaf and ham or cheese (or any other combination to taste). Spread the remaining egg mixture on top, smoothing lightly, then top with the final slice of bread. If desired, trim the crusts, then carefully cut the sandwich into four pieces, trying not to crush the egg. Skewer each sandwich with a toothpick. Serve with chips.
