Easy protein pancakes

Boost protein levels with these pancakes made from eggs, oats, milk and protein powder. A great post‑workout breakfast, enjoy with nut butter or fruit.

Ingredients

2 serv.
  • banana1
  • oats75g g
  • eggs3 large

    large

  • milk2 tbsp tbsp

    (any milk: dairy, soy, oat or nut)

  • baking powder1 tbsp tbsp
  • cinnamonpinch of

    pinch

  • protein powder2 tbsp tbsp

    (whey, pea or any flavour you like)

  • coconut oil

    or neutral oil for frying

  • nut butter

    maple syrup and berries or sliced banana for serving

Step-by-step instructions

    Blend the banana, oats, eggs, milk, baking powder, cinnamon and protein powder in a blender for 1–2 minutes until smooth. Check that the oats are finely ground; if not, blend for another minute.

    Heat a little oil in a skillet. Pour or spoon 2–3 portions of batter onto the pan, leaving some space between them to spread. Cook for 1–2 minutes until bubbles appear on the surface and the underside is golden. Flip and cook another minute until done. Transfer to a warm oven and repeat with the remaining batter. Serve the pancakes stacked with nut butter, maple syrup and fruit.
